Armand Sablon – From Brighton, England
A winner of the Roux Scholarship in 2007, he gained the opportunity to train with Marc Haeberlin at his 150-years family-run Auberge de l’Ill, 3 Michelin-starred for 51 years.
Back to London, he delivered haute-cuisine at prestigious kitchens including The Lanesborough, Orrery, Galvin at Windows, one Michelin starred Ambassade de l’Ile. In 2012, Armand joined 5-star Hotel Café Royal as Head Chef of Ten Rooms, before overseeing all outlets and the openings of Laurent Tourondel’s Laurent restaurant and Albert Adria’s Cakes and Bubbles.
In Hong Kong, since 2021, he is channeling European flair and 20 years expertise at Harbourside Grill.
