Nicolas honed his skills at the finest MICHELIN-starred establishments in France, including Maison Lameloise (three MICHELIN stars), La Maison Troisgros (three MICHELIN stars), Les Jardins de l'Opéra (two MICHELIN stars), Jean Bardet (two MICHELIN stars) and Hauterive Saint-James (two MICHELIN stars). In 2013, Nicolas joined ÉPURE as Executive Chef, which then earned a MICHELIN star for six consecutive years. And now, he expresses the true beauty of fine dining by stimulating the senses, respecting the seasons, mastering simplicity and offering his guests at Ami a culinary experience like no other.
